This recipe for Slow Cooker BBQ Pulled Chicken Sliders actually came about last year when I was asked to devise some recipes using Newman’s Own Original Sticky BBQ sauce. Unfortunately, this meal idea was not used but it seemed a shame to let it sit in my drafts folder. During the week, my time is precious as it seems that there is always something happening, always a job to do and I find that I’m always in a rush! With the kids at school, a part time job, my PTA volunteering, my blog, trying to keep on top of the household chores, after school clubs, homework and a puppy to contend with, it can be hard to fit everything in and prepare a meal for the family that is nutritious and homemade. However, where possible I do like to make meals from scratch and one way I find I can achieve this is to use my slow cooker, which allows me to get on with life while it cooks food for me, albeit with a little preparation at the start.
Cauliflower Chilli Con Carne is a delicious veggie chilli con carne which uses cauliflower and lentils in place of meat or a meat substitute such as Quorn mince. It was made in a slow cooker which helps cook the vegetables and lentils to perfection.
