At the start of every new year I try to make some new years resolutions. In the past I have made many and predictably, I have failed to make a lot of them come true or last long if at all. Nowadays, I prefer to call them goals as this sounds more achievable to me somehow, I think the whole new year new me attitude is more positive and more relatable to me personally, than using the term ‘resolutions’.

As much as I enjoy cooking and baking for my family, it is always nice when I do not have to and to have someone else prepare a meal for me instead. I suppose as a family we eat out maybe once a month, sometimes more like if we are away on holiday. There was a time when my boys were younger that we hardly never ate out. Mostly due to them being fussy eaters and also because sometimes the hassle of keeping them occupied while waiting for food, was too much for me to be able to relax and enjoy the ambience of eating out!

I call this cake Vegan because the sponge and frosting are egg and dairy free. However, Reese’s peanut butter chocolates, together with the milk and white chocolate drizzle toppings, are of course not vegan. Therefore if you wanted to make this cake completely vegan then you would need to find an alternative topping. Nonetheless this delicious Nearly Vegan Chocolate Reese’s Peanut Butter Bundt Cake was good enough for the person I baked it for.
