With Christmas fast approaching it seemed only fitting to blog about a festive dessert which could be an alternative to the more traditional Christmas Pudding, or maybe could be served along side it on the BIG day. This Christmas Madeleine Cherry Chocolate Pudding is actually one based on a Zuccotto recipe which usually involves panettone, and is a dessert that I have made a few times over the years and is delicious! So this is a French/Italian/ German/English fusion dessert for sure!
So a couple of weeks ago, I bought myself some cherries, as I got a taste for them while on holiday last month. Unfortunately, I put them in the fridge and forgot about them, until this weekend when I found them unopened and while tasting fine, (although not as lovely as the ones I tried on holiday) they were looking a little squishy!
I do love a fruit cake. Any type will do. It is not a cake I make very often because a sponge cake is so quick and easy to bake, and there are more variations you can make. However, when I saw that the theme for GBBO this week was Victorian and the baking categories were either a Game/Meat Pie, a Traditional Fruit Cake or a Charlotte Russe, I decided that a fruit cake was easier and more likely to be eaten, and would make a nice change.
As regular readers to my blog will know, I am often making recipes based on whatever I can lay my hands on in my house that day. I rarely stick to recipes , despite my huuuge collection of recipe books! Often my recipes are an accident because I have an idea but when I go to make it, I am an ingredient short, for example.
A dessert that always reminds me of my childhood, and one which was often eaten at special occasions, was a black forest gateau. Of course nowdays it is regarded as a retro pudding and not one which I often see on dessert menus whenever I eat out, or something that is brought out at family gatherings silce I have become an adult. I have no idea why it is not as popular as it once was, because what is not to like? Chocolate sponge, black cherries and cream -I mean thats a win win combination in my eyes!!
