These Chicken & Cherry Tomato Parcels with Green Pesto and Mozzarella are individually baked inside Bacofoil, which locks in all of the delicious flavours.
When it comes to cooking, I hate faffing around for ages in the kitchen. I like to cook meals that don’t take too long to prepare, that are packed full of flavour and do not make too much washing up. That is why I love this recipe for Chicken and Cherry Tomato Parcels with Green Pesto and Mozzarella, because it is easy and fast to prepare, it is very tasty and being baked inside individual Bacofoil sheets, means it doesn’t use lots of pots and pans either.
This Curried Chicken Pie is a great way to use up leftover chicken and vegetables from a roast dinner. With just a shortcrust pastry lid, this pie is a tasty dinner for a mid week family meal.
With it being pie week on the Great British Bake Off this week, it was a great excuse to make a pie for tea and eat some homemade pastry! I do not eat pastry very often because, while blooming’ delicious, ultimately it is not very low in fat/calories and also because my two boys do not eat it. However, I was quite excited to bake a pie this week, and decided to be a bit different and make a Curried Chicken Pie in the hopes that it might make it more interesting for my fussy eaters. We eat a fair bit of red meat dishes in our house. We do not eat lamb, however, as none of us like it, but I do cook with beef, and occasionally pork mince, to make some easy family meals. While the majority of my red meat dishes are relatively straight forward, because I have a pair of fussy eaters, occasionally I like to make them something a bit different to make mealtime a bit more fun for my boys, especially after a busy week at school. These Lego Burgers are exactly that – fun and tasty. Yet they still contain the nutritional goodness that a pair of growing boys need in their diet.
These mini Meatloaf Muffins are perfect for a family meal served alongside some creamy mash and vegetables. Any leftovers could even be eaten cold in lunch-boxes the next day, or frozen for another time.
My mini Meatloaf Muffins are a fun way to serve a classic recipe to your family. Meatloaf Muffins may well appeal to children more than a slice, or even a chunk, of the regular shaped meatloaf would too. By making them in a muffin tray, you automatically get individual portions ready to serve to your family.
These tortilla bowls filled with Smokey Barbecue Pulled Beef Chilli featuring Newman’s Own Original Sticky BBQ Sauce are perfect for a mid-week family meal that is fun to eat, tasty and nutritious too.
During the week, my time is precious as it seems that there is always something happening, always a job to do and I find that I’m always in a rush! With the kids at school, a part time job, my PTA volunteering, my blog, trying to keep on top of the household chores, after school clubs, homework and a puppy to contend with, it can be hard to fit everything in and prepare a meal for the family that is nutritious and homemade. However, where possible I do like to make meals from scratch and one way I find I can achieve this is to use my slow cooker, which allows me to get on with life while it cooks food for me, albeit with a little preparation at the start.
