It is Pastry week on the Great British Bake Off tonight and while the pies featured on the show will be very ornate and pretty, I just did not have the time last weekend to make a show stopper of a pie. Instead I did find time to make this Halloween inspired Cherry and Chocolate Mummy Pie.
A Cumberland Rum Nicky pie in the true sense contains sticky dates with rum and stem ginger. My version is more child friendly as it contains apples and apple juice, and served alongside a toffee sauce for extra deliciousness!
I took a gamble baking ahead of tonights Great British Bake Off, because having only seen the preview of this weeks episode at the end of last weeks, it was hard to determine exactly what bakes were going to be featured tonight in the Forgotten Bakes theme. Having turned to my fellow #gbbobloggers2017 , we think we identified two of tonights bakes and one ‘could be’ a Cumberland Nicky. I made different version without any alcohol , hence a Cumberland No Rum Nicky.
This Curried Chicken Pie is a great way to use up leftover chicken and vegetables from a roast dinner. With just a shortcrust pastry lid, this pie is a tasty dinner for a mid week family meal.
With it being pie week on the Great British Bake Off this week, it was a great excuse to make a pie for tea and eat some homemade pastry! I do not eat pastry very often because, while blooming’ delicious, ultimately it is not very low in fat/calories and also because my two boys do not eat it. So it is week 4 of the Great British Bake Off which means it is the fourth week of our Great Bloggers Bake Off!!! I was completely taken aback by the entries to the last linky – 39 in total which is amazing and all the desserts were so fantastic too. I love how everyone is continuing to challenge themselves and produce some outstanding results *pats everyone on the back*
