This Cherry and Chocolate Mummy Pie has been inspired by Halloween for a bit of easy dessert fun. Why not give it a try for your family and enjoy seeing the ‘bloody’ cherry filling ooze out!
It is Pastry week on the Great British Bake Off tonight and while the pies featured on the show will be very ornate and pretty, I just did not have the time last weekend to make a show stopper of a pie. Instead I did find time to make this Halloween inspired Cherry and Chocolate Mummy Pie.
Welcome to week 6 of the GBBO and therefore week 6 of my bakes along linky (aka GBBOBloggers2018 / GBBOBakeoftheweek) and it is Pastry Week.
*Please see below for details of a new prize draw where you can win some amazing and beautiful baking items from Rex London a draw which ends on the 30th October, which is sadly the final episode this series *
Don’t forget that at the bottom of this post is some exciting news regarding a fantastic prize for the final week of the bake along/show, thanks to Sage Appliances and of course the round up from last weeks linky (aka Spice week) and discover who Helen and I chose as our Star Bake of the Week.
Anyway, back to my pie recipe. So this is not a fancy pie by any means. Just a cherry and chocolate pie which I have attempted to look like a ‘mummy’ in time for Halloween. Not a new idea and certainly not one I have invented myself, for there are lots of ‘mummified’ pies and pastries all over the internet. Still, it was easy and quick to make which I needed this week after a busy weekend.
As you can see, while not having a soggy bottom (yes!), my pie did collapse as I removed it from my dish. However, this does not bother me because it still tasted delicious and its the look of the pie while inside the dish that matters.
This pie is very forgiving especially if your lattice work is not star baker worthy (that would be me then!), because the strips of pastry are easy to construct and add. Cherries and chocolate work very well together, but of course you could easily use a different filling. of course adding a cherry filling, does make the overall ‘bloody’ Halloween effect more realistic.
Recipe:
- 375g Plain Flour
- 200g Cold Butter
- 100g Caster Sugar
- 1½ beaten eggs
- a dash of milk
- *Filling*
- 2 x Tins of Princes black cherry pie filling
- milk and white chocolate chips (approx 50g of each)
- *Decoration*
- 2 edible eyes
- You can make the pastry by hand or in a food processor - entirely up to you.
- *By hand*
- Rub the flour into the butter within a large mixing bowl
- Stir in the sugar
- Using a knife, add the egg and bind together - you may need to add a little milk until a soft dough forms
- Wrap in cling film, and place in the fridge for at least 30 mins to chill
- After the chilling in the fridge time, pre heat the oven to 180oC / 160oC (fan) and lightly grease a pie dish/roasting dish of your choice with butter . I opted for an oval shape but your choice. Approx 20cm in size.
- Remove the pastry from the fridge and roll ¾ of it out into a large rectangle on a lightly floured kitchen surface
- Carefully using your rolling pin, lift the pastry and line your dish with it. If it breaks, don't worry too much as you can repair it easily enough
- Fill the pastry lined dish with your cherry filling and the chocolate chips
- With the remaining pastry, roll out and then take strips and roll them slightly and cut them to fit the top of the pie, to make rows like bandages
- Once completed, scatter the pastry bandages with some more caster sugar and bake in then oven for approx 30-35 minutes until the pastry is golden brown.
- Add your edible eyes and serve warm or cold.
