Sometimes I amaze myself with my bonkers baking or cooking ideas, and after receiving my latest Degustabox UK subscription box earlier this week, my initial thought was to make something using the Jim Jams (reduced sugar) chocolate spread.
To be honest I was not sure what to call this cake in terms of its sugar content! Basically, there is no sugar mentioned in the recipe list, because I did not use any. I also did not use any sugar free alternatives. I did, however, use some chocolate spread (which does contain sugar) and some peanut butter (naturally recurring sugars) and sweet potato which adds natural sweetness to this delicious cake.
Yes you have read this recipe correctly. Cookies that contain sweetcorn! And yet they work and they taste really nice, so much so that Jenson LOVED them and did not believe me, when I told him he was eating that yellow vegetable that he does not like on his plate usually inside something so ‘yummy mummy’!
I am not a very crafty or arty person and I do not take on many challenges which involve sticky back plastic, glue, scissors and imagination, because my end result never seems to mirror what I had envisaged in my head!!! And to think I grew up wanting to be a Blue Peter presenter!!!
A friend of mine is off work at the moment recovering from a minor operation that she has last weekend. I planned to visit her this morning and wanted to take her something she could enjoy while her children are out at school. I knew that she would be inundated with chocolates, soooo I thought I would make some flapjacks as I know she is rather partial to them!
