A friend of mine is off work at the moment recovering from a minor operation that she has last weekend. I planned to visit her this morning and wanted to take her something she could enjoy while her children are out at school. I knew that she would be inundated with chocolates, soooo I thought I would make some flapjacks as I know she is rather partial to them!
To combat the fact that she is resting and not as active as normal, and all the chocolates I knew she would be eating whilst bored at home which friends and relatives would have given her, I thought I would try a recipe for some low sugar ones that I found in The Sugar Free Kitchen cookbook which I have been sent to review. The flapjacks I made for her are not completely sugar free as I did not have any rice malt syrup, so I used golden syrup instead. I also did not have any quinoa flour (I had not even heard of it before!), so I used some crushed weetabix instead! Trust me this did work!!!
So here are my Low Sugar Berry Flapjacks
- 115g unsalted butter
- 100g crushed Weetabix (approx 3 biscuits)
- 100g oats
- 2 dsp golden syrup
- ½ tsp nutmeg
- 1 tsp cinnamon
- ½ tsp ground ginger
- 50g blueberries
- 50g raspberries
- Pre heat the oven to 160C /140C (fan)
- Grease and line a loaf tin (I like my flapjacks thick)
- Place the butter and golden syrup in a pan and put on a low heat and melt together
- Place all of the dry ingredients into a large mixing bowl
- Pour over the butter and syrup and stir well
- Stir in the blueberries and raspberries carefully
- Pour into your prepared tin and smooth over the top
- Place inside the oven and bake for approx 25 minutes until golden on top
- Leave in the tin for 30 minutes to cool before removing and allow to coll completely before cutting into squares
The recipe had called for an egg which I missed, but I don’t actually know why the egg was needed, as I have never added one to a flapjack recipe before!!
These flapjacks were really delicious – the ginger added a lovely flavour, and they were fruity and gooey and not too sweet. As much as I love flapjacks, and despite me having a sweet tooth, even I find them too sweet sometimes!! My friend said they were lovely too and I must admit after sampling a small piece myself, I will be making them this way again!

Oh those flapjack look lovely. It’s great to see that they are sugar free as flapjack usually contain loads of sugar.
