It was a very hectic week here last week, mostly due to it being the school Halloween disco yesterday and because I am a member of the PTA, the preparations can take a while to sort out! I would never think to pair coffee and butterscotch together, but I recently found  a recipe for some sticky coffee and walnut puddings which combined these flavours, and I thought I would try them out in cupcake form. I was surprised to discover that they go very well together and the sweetness of the butterscotch complements the bitterness of coffee nicely. Which I guess makes sense, as I do enjoy a caramel latte from time to time!

With Spring on the way, it makes me think of light bites for lunch and eating more al fresco food, and wanting to see explosions of colour on my plate. I also think it is much easier to eat more healthily once the weather is warmer, because salad is far more appealing when it is hot and sunny because it is refreshing on the palette.
