With Spring on the way, it makes me think of light bites for lunch and eating more al fresco food, and wanting to see explosions of colour on my plate. I also think it is much easier to eat more healthily once the weather is warmer, because salad is far more appealing when it is hot and sunny because it is refreshing on the palette.
I was recently sent a recipe book from Love Food called Eat Your Greens! , and among the tasty sounding dishes was one for a Greens, Pea & Bean Burger, which I thought was perfect for a sunny day like today to have for lunch. Of course as usual, I did not have all of the ingredients needed to make this dish, so I adapted and used what I could find to make my own version and I have called them Rocket & Mixed Vegetable Bean Burgers and here is how I made them.
- 75g rocket
- 75g frozen mixed veg (carrots, cauliflower & broccoli)
- 1x 400g tin of butterbeans, drained
- 1 egg
- 1 tsp garlic
- 1 handful of porridge oats
- black pepper
- 1 onion, grated
- 1 tsp thyme
- flour for dusting
- frylight or vegetable oil for cooking
- boil the frozen veg and steam the rocket over the top for about 3 minutes
- drain the veg and then squeeze any excess water out of the cooked rocket
- place into a food processor along with the oats, egg, butterbeans, garlic, grated onion and black pepper
- blitz for a minute
- Divide the mixture into 4 burger shapes, place on some greaseproof paper and chill for a couple fo hours
- Once chilled and much firmer, dust each burger into some flour
- Heat some oil/frylight and pan fry the burgers for about 5 minutes on each side (you might need to turn each one a few times so the bottoms do not burn), until golden brown
- Serve alongside some salad and salsa (serves 2) or you could serve in a bap which would make this recipe go around 4 people.
These were very easy to make and prepare and made a lovely lunch in the sunshine!
