Now please do not let the title of this flapjack pur you off from reading on, I know prunes , I am using prunes in a bake!!! BUT let me explain why, before you dismiss this recipe.
I always try to bake some cakes for the playgroup that I help to run, and my bakes are usually based on blog recipes that I have created or been asked to create, or I make something based on what I can find in my kitchen. Well, these flapjacks are a combination of a review of a cookbook and using what I could find!
Instead of making raisin flapjacks, which lets face it while yummy is well ….. safe and a well known addition to a flapjack, I did not have any!!! I did, however, have a packet of unopened dried prunes in my baking drawer which I had forgotten I had to be honest. I figured that they could work well in a flapjack, afterall they are squishy like raisins and apricots both of which bake well. So along with an over ripe banana that I had, my Prune and Banana Flapjacks were born!
And here is how easy they are to make (*please note: you can substitue prunes for raisins if you prefer!)
- 150g poridge oats
- 150ml Clarks Organic Agave Syrup
- 115g unsalted butter
- 1 large over ripe banana
- 85g chopped prunes
- Pre heat the oven to 190oC / 170oC (fan)
- Grease and line a square or rectangular brownie tin
- Place the butter and maple syrup in a pan over a low heat and melt while stirring occasionally and then add the banana and mash into the hot liquid
- Place the oats in a large bowl, with the chopped prunes, and pour over the banana sticky sauce and stir well to coat all of the oats
- Pour into your baking tin and cook for about 20 minutes until golden brown
- Using a sharp knife, mark your flapjack into portions
- Leave to cool before lifting out the flapjack and then cutting into bars
I took these to playgroup , BUT I did not tell people it contained prunes for fear that it would people off. Well I was happy to see that they all got eaten, and even some of the children sampled some yaaaay!!! Everyone agreed that the flapjacks tasted really nice, but they also agreed that had I given them the prune word first, they probably would not have tried a piece!
So there you go, prunes can work in a flapjack!!!
