These Mini Egg & Marshmallow Crispy Cakes are very easy to make and devour! Perfect for making with your children as no oven is required.
I love the baking ideas that Easter provides. I still have a few that I have not made yet, and I might try and get one more out before the Ester weekend, but I fear that this one may be my last until next year now, due to it being the holidays and I have no playgroup to donate my baking to!
It is not often that I buy myself a chocolate bar. I have been known to place grab bags of chocolates (like Maltesers) into my trolley when I am shopping if they are on a special deal, and I can never say no to the Popping Candy and Jelly Bean Marvellous Creations bars whenever they are on offer because they really are the bees knees in chocolate land. But, asides from that, I prefer to buy biscuits or make homemade cakes to fuel my sweet tooth.
However, one of my favourite chocolate bars that I used to buy when the fancy took me, were Toffee Crisps. I think it is because they are like chocolate krispy cakes which always take me back to my childhood, and especially birthday parties I went to. Or maybe it is just because they are yummy!!
Anyway, I was recently asked by Good To Know if I fancied having a go at recreating a guilty pleasure and I thought that making my own version of a toffee crisp would be easy (ish) enough. So here are my homemade Toffee Crisp Bars and how I made them.
Homemade Toffee Crisp Bars

- 125g rice krispies
- 175g unsalted butter
- 5 Mars Bars - roughly chopped
- 300g milk chocolate
- Line a 7 x 10 inch baking dish with grease proof paper
- Place the butter and the Mars Bars into a saucepan and melt gently over a low heat, stirring frequently.
- Once melted, beat well to eliminate any lumps
- Add the rice krispies and mix well to ensure they have been coated in the mars bar sauce
- Pour into the baking dish and ensureit is pressed into all thre corners and the top is smooth
- Leave somewhere cool for about an hour
- Meanwhile melt the chocolate - I did mine in the microwave at 30 second bursts
- Once the krispy mixture is cool, pour the chocolate over the top and smooth it all over
- Leave somewhere cool again until the chocolate is cool and then place in the fridge for an hour to set
- Then carefuly remove from the dish and using a sharp knife cut into equal sized rectangles - you should get 9 bars to make them toffee crisp bar sized.
- Keep in an airtight container in the fridge to keep them as crispy as possible and the chocolate firm and chilled.
These tasted as good as they looked! The Mars Bar adds the glue that holds the krispies in place, while also adding the toffee in the toffee crisp! I recall some time ago (maybe an old recipe book, or from a TV show I cannot recall exactly where now) discovering that if you use Mars Bars it eliminates the need to add golden syrup. I did add a thick layer of chocolate on the top instead of covering the entire krispy bars with chocolate, which you could do if you wanted to. I felt that was a bit of a faff so I settled quite happily with a thick chocolately topping instead.
This is a very easy way to recreate a guilty pleasure and it went down very well at my toddler group! The krispy part does not stay as crispy as the real thing, but it still tastes delicious!! Why not give these a go? They could be cut into smaller bars (which I did once I photographed them) and would be great served at parties and they could just as easily be made into paper cake cases and topped with chocolate like a more traditional chocolate krispy cake.
