My new DegustaboxUK parcel arrived last week, and it is always fun opening it up to see what food items I have received this month, and then thinking up a recipe to feature some of the products.
Having looked through the products inside, I decided to make a breakfast type loaf using the following items to bake with
Having made a loaf cake from breakfast wheat biscuits before,(which would also work in this recipe if you have some at home) I figured that I could make something similar using the Gold & Grains Nutribix instead.
I also added the Beloved Dates seedy bars, which I whizzed into crumbs, to the loaf to give it more texture and bite.
I added a ripe banana and some currants which I already had, to give my loaf more flavour, and I used black tea to soak the Nutribix in to soften it, and I added a toffee flavoured yogurt too. This was a recipe which is very easy to make, and would be great for kids to make because it can all be mixed by hand in one bowl.
I topped my finished loaf with some melted Divine chocolate caramel, but to be honest adding this is optional really, and the loaf would still be tasty without any added chocolate topping.
Here is how I made this loaf
- 250g flour
- 1 egg
- 1 ripe banana
- 2 tsp mixed spice
- 50g currants
- 150g sugar
- 2 x Beloved Date bars
- 4 wheat cereal biscuits - I used Gold & Grains Nutribix
- 250ml black tea using 1 tea bag
- 150ml of low fat toffee yogurt
- Pre heat the oven to 180oC / 160oC (fan)
- Grease and line a 1lb loaf tin
- Place the fruit and seed bars in a food processor and blitz to make crumbs
- Place the wheat biscuits in a bowl pour over the tea and mix well.
- Add the beaten egg, sugar, flour, mixed spice, banana, yogurt and newly made crumbs and beat together
- Fold in the currants
- Pour into to your prepared tin and cook for about 1 hour and 45 minutes until a skewer comes out clean (if the top of your cake looks like it is browning too much, you can cover with foil)
- Once the cake is completely cooked you can slice it and eat as it is,or you can add some melted chocolate to the top as I did.
This tasted really nice, and the seed bar crumbs added a lovely bit of crunch to the loaf. This would be lovely served for breakfast (minus the chocolate topping of course!) or in a lunch box.
