So Week 5 was all about bakes using alternative ingredients and 25 of us had a go at creating something free from…whether it be gluten, sugar, dairy, or in some cases a mixture. Some of you even went for a vegan bake.
Before I start with this weeks Star Bakers, I would like to thank Kirsty for hosting this weeks linky and for making such a scrumptious looking Coconut Bounty Cake.
So back to our Star Bakers and, as usual, I will select one from each baking category which were:
to bake without sugar, gluten or dairy
gluten-free pittas
dairy free arctic roll
Sugar, Gluten or Dairy Free Bakes
There were so many tasty looking cakes and bakes, such as these blackberry and blackbean brownies, this gorgeous looking apple, raspberry and honey cake and this fun Confetti Cake. Mind you this Orange and Almond Cake looks divine, and look at the sticky figgy jam on this Almond Cake , and you would never know that this Chocolate Cake was vegan!
In the end it came down to 3 recipes, and this Sugar Free Carrot Cake and these Dairy Free carrot Mini Loaves were close runners up, BUT I am going with this one, a Sugar Free and gluten free orange and maple polenta cake with candied carrot. Not only was I impressed with the use of polenta, but candid carrots – how different and I loved that this cake was made with the help of Miss T. Lovely looking cake too 🙂
Gluten Free Pittas
These looked really hard to make on the show, so I applaud anyone who attempted these! I have chosen Beckie’s pitta bread just because I think they looked the best in terms of thickness and texture, and they look so light and airy almost too. So well done Star Baker 🙂
Dairy Free Arctic Roll
So in the end, only one baker attempted this and it was Alyssia with her bee inspired arctic roll which included a stripy honey flavoured swiss roll with honey combe infused ice cream and put it together and what do you have this 🙂 Sounds delicious
Special Mention
Sometimes a blogger goes over and beyond the call of the bake off and Serena did this! She only went and made a duo of GF and DF profiteroles – something which a GF cookery instructor told her was impossible! Well, clearly it is not, because Serena made a feast of them and they looked fabulous. So I think this deserves a Star Baker badge of honour 🙂 well done x
