Having been away for the weekend, I spent the day today washing (but not drying grrrr to the rain we had all day!), unpacking and food shopping. I noticed that some apples were looking a little sorry for themselves in my fruit bowl before I headed to the supermarket, so I decided to make an apple based cake to get them used up.
I noticed some apple and butterscotch floured yogurt while I was out shopping, so I knew then that an Apple and Butterscotch Loaf Cake was on the cards, and so that was what I made. Here is how I made it:
- 115g unsalted butter
- 200g caster sugar
- 2 eggs
- 1 tsp cinnamon
- 250g self raising flour
- 100g yogurt – I used Rachels Organic Apple & Butterscotch flavour
- 2 eating apples, peeled and diced
- 75g mini butterscotch pieces (I used Sainsburys own)
- pre heat the oven to 180oC / 160 oC (fan)
- grease and line a 1lb loaf tin
- cream together the butter and sugar for about 5 minutes until pale and creamy
- add the eggs, the cinnamon and a spoonful of the flour and beat the mixture for a couple of minutes
- Add the remaining flour and the yogurt and mix until combined – being careful not to over do it
- Pour 3/4 of the batter into the tin
- Sprinkle over 3/4 of the apple and butterscotch pieces
- Cover with the remaining cake batter and smooth over
- Scatter the remaining apple and butterscotch pieces over the top
- Cook for about 45 – 50 minutes until risen, golden and cooked right through
- Allow to cool and then remove from the tin and place on a wire rack
- Slice and enjoy
Mmmmm this is sweet, sticky and the butterscotch adds a lovely flavour to the sponge. I know that the mums and dads at playgroup will enjoy this with their teas and coffees tomorrow 🙂
