Now as much as I love cake I also love drinking tea. I feel as if I have turned into a old woman sometimes, because I love other more than sipping a hot cup of tea. Of course eating cake and drinking tea is even better. Knowing how well tea complements cake, I thought I would make a cake which contained tea to see if that would work as well.
Using some Choco Aztec Spiced Tea Bags which I had been sent (along with a bundle of other teas from Yogi Tea) I opened the bags and added the tea mix to my cake batter so as to properly infuse the sponge.
Once cooked the grains of tea not only added a lovely flavour but made the cake look very pretty. I decided to add a fresh cream filling, and, as I had some in my fridge at the time, I added some blackberries aswell to make my cream a pale violet colour, which I think really finished off the cake perfectly.
If you fancy making this delicious cake, here is how to do it


- 200g unsalted butter
- 200g self raising flour
- 200g caster sugar
- 4 eggs
- 3 Yogi Choco Tea bags with Aztec Spices - cut open
- 200ml double cream
- 1 punnet of fresh blackberries
- 1 tbsp icing sugar
- pre heat the oven to 180oC / 160oC (fan)
- grease and line 2 x 8 inch tins
- cream the butter and sugar together for about 5 minutes until pale and soft
- add the eggs and the inside of the tea bags and 1 tbsp of the four and beat well until light and airy
- then fold in the remaining flour
- pour into the 2 tins and bake in the oven for about 25 minutes until risen and cooked all the way through
- once cooked allow to cool and then remove form the tins and cool on a wire rack
- whip the cream with all but enough blackberries to decorate your cake - I used 12 for my 12 servings
- once the cream is almost stiff, fold in the icing sugar
- then sandwich the sponges with some of the cream and use some more to top your cake with, and then add your blackberries to finish it off (you may not need all the cream)

This cake really was delicious and the people at playgroup, who ate it, all said what a great taste it had, even though it was like nothing they had eaten before or indeed if it would be a cake they would have tried otherwise. The fragrant spices of the tea did come through in the cake but it was not too overpowering, and the blackberry cream added some fruity sweetness. Yummy!!

PS: Funny, you’ve used that brand of tea. My best friend from school got me the Green Energy Tea the other day. I had never heard of the brand before, but it’s really really nice x

I’ve never thought of putting the tea leaves directly in the cake mix. I’ve got some in the kitchen so I may give it a go.
