Now I am well aware that making ice cream from frozen banana is not a new concept. I remember making some for Burton when he was much, much younger when he would eat it. When I made it again as a toddler he refused to eat it, as he did not like ice cream in any shape or form then until he was about 4!
I thought I would have a go at making it again the other day, but with a twist. I have heard of brown bread ice cream before but have never had a go at either eating or making it myself. Therefore, looking through my bread cupboard I found some chocolate chip brioche and wondered if this would make for a good ice cream in place of brown bread crumbs? Hmmm well there was only one way to find out!
Here is how I made my easy Banana and Chocolate Chip Brioche Ice Cream:
- 3 bananas, frozen with skin removed
- 3 Pasquier Chocolate Chip Brioches
- 50g sugar - I used Coconom Organic Coconut Sugar (a
- 15g butter
- place the brioche in a food processor and whizz to make crumbs
- melt the butter in a non stick pan over a lowish heat and add the sugar and the brioche crumbs, stirring well to coat them.
- Cook for approx 10 minutes, stirring often so that the brioche crumbs don’t catch, until the mixture is caramelised. The chocolate chips will melt but it will be ok for the ice cream
- While the crumbs are cooling,place the bananas in a food processor blender and pulse to make a creamy banana puree
- Add the now cooled brioche crumbs and mix quickly
- Transfer the mixture to a tupperware tub with a lid and freeze for at least an hour before eating, or if you do not want it immediately it will keep in the freezer for a few weeks.
This was really nice and not too sweet and it was even more enjoyable knowing that it was almost guilt free!! Plus using Coconom Organic Coconut Sugar made this ice cream even more guilt free because it is a completely natural alternative (1:1 replacement) to sugar made from 100% Coconut tree blossom sap.
