I am on the PTA for Burton’ school, in fact I am the secretary, to give me my official title *ahem*, and it does keep me busy because we are a small group at the moment, but it is good fun and I have made some good friends since I joined.
Last week we had a disco for the school children and I helped out with the younger childrens one, and I thought I would make something for those of us helping to eat. I figured we might all appreciate something to keep us going, and give us lots of much needed energy, and to stop us from feeling hungry as many of us would not be eating until much later. I decided to make a tea loaf which was jam packed with energy boosting ingredients such as banana, wheat cereal biscuits, raisins and caffeine! Hence my Wheaty Tea Loaf was created.
The end result was surprisingly yummy and reminded me of sticky malt loaf, with a bit more texture and a slight crust on the top. Here is how I made it:
- 250g flour
- 1 egg
- 1 ripe banana
- 2 tsp mixed spice
- 50g raisins
- 150g sugar
- 4 x 9bar Fruity bars
- 3 wheat cereal biscuits (I used FUEL10K Protibrick)
- 275ml milky tea using 1 tea bag
- Pre heat the oven to 180oC / 160oC (fan)
- Grease and line a 1lb loaf tin
- Place the fruit and seed bars in a food processor and blitz to make crumbs
- Place the wheat biscuits in a bowl (I used my free standing mixer), pour over the tea and mix well
- Add the beaten egg, sugar, flour, mixed spice, banana and newly made crumbs and beat together
- Fold in the raisins
- Pour into to your prepared tin and cook for about 1 hour and 45 minutes until a skewer comes out clean (if the top of your cake looks like it is browning too much, you can cover with foil)
- Once the cake is completely cooked you can slice it and eat as it is, or spread each slice with butter for a yummy malt loaf like cake.
This was so nice and reminded me of malt loaf which I like a lot! It was perfect for keeping my energy levels up for the duration of the school disco and it kept the hunger pangs at bay too. Obviously if you do not have any fruit and nut bars to use, you could add some seeds of your choice instead.
