Even though we are still eating up chocolate easter eggs, I fancied something cakey on Sunday, so once the boys were happily making jigsaw puzzles I went into the kitchen to see what I had to inspire me.
I found a packet of Jordans Lighter Strawberry and Blueberry Granola which I had in my DegustaboxUk parcel a few weeks ago. Seeing as though this cereal claims to contain 30% less fat than the standard Jordans granola, I thought I could use them in some muffins to add some texture.
I decided to use oil inplace of butter, thus making these muffins dairy free. I also used a lot less sugar than I would normally for making muffins, in fact I used some Canderel and some maple syrup, but caster sugar would work equally aswell. Then I simply added a grated apple, for more natual sweetness and to add moisture, some cinnamon and some of the granola to make a tasty muffin batter
Using cereal in muffins works well and makes for a tasty snack
Here is the recipe, should you fancy making some yourself


- 200ml oil (I used rapeseed oil)
- 3 eggs
- 100g Canderel
- 1 tbsp maple syrup
- 1 tsp cinnamon
- 1 large grated (eating) apple
- 50g Jordans Strawberry & Blueberry Lighter Granola
- pre heat the oven to 180oC / 160oC (fan)
- place the oil, sugar and maple syrup in a bowel and cream together for about 5 minutes
- add the eggs and beat well
- fold in the flour and cinnamon
- then add the apple and granola and mix well
- divide the batter between the cake cases
- cook in the oven for about 20-25 minutes until cooked right through
- leave to cool before eating

Yum! Even the boys liked eating them – so they must be good !! They are not as light as regular muffins but tasty nonethless and would be good for a grab and go breakfast food, or maybe for lunch boxes.
