We eat a lot of yogurt in this house and it is the one thing the boys eat as a dessert along with their fruit. Infact they would happily eat yogurt for breakfast, lunch and for dinner given the chance and some days they do! So I was delighted when Stapleton Yogurt contacted me and asked if we would like to try some of their yogurt. I was sent quite a bit so as well as eating it the conventional way, I also used it in some recipes. Trying to be a bit healthier as I want to lose some weight before the summer, I wondered if I could make an ice cream using thick yogurt in place of double cream. Having a rummage through my cupboards I had a tin of ready made caramel toffee in a tin so I made a toffee and yogurt ice cream
- 1 tin of ready made caramel (397g)
- 600ml thick yogurt - I used a mix of Stapleton Yogurt Greek Recipe Vanilla and Natural yogurts
- Toffeee fudge pieces to serve
- Place the caramel and yogurt into the bowl of a free standing mixer (or use an elecrtic whisk and a bowl)
- Whisk together for about 5 minutes
- Bear in mind that the mixture will not get very thick , but it will thicken
- Then simply pour into a 1 litre plastic tub with a lid and then place in the freezer over night
- Serve with some toffee fudge pieces for some extra indulgence!
I have to say that the ice cream was extremely creamy and you would not have guessed it did not contain cream. And being made with yogurt means it has to be less fattening too which is a good thing surely!

The great thing about Stapleton yogurts is that they are made here in North Devon so they are very local to me. They are made simply from creamy milk from a local herd of Jersey cows, mixed with unrefined cane sugar and top-quality fruit or other such delicious ingredients. No artifical ingredients are used so you know that by buying and eating Stapleton yogurts you are filling yourself up with 100% natural goodness.
Stapleton yogurts are really delicious and I especially enjoyed their strawberry and clotted cream pots and the lemon curd greek recipe thick one – sooo lemony it was sooo good. The boys enjoyed the raspberry ones – although they could not manage a full pot each as they are quite big!
So next time you are out shopping , why not try a little bit of North Devon made yogurt yourself?

Those yogurts look delicious! Mushroom loves his yogurt too and think he would love these so we will look for them when out shopping. Might try that ice cream too!

I am craving that toffee yoghurt now! I always prefer frozen yoghurt to ice cream and that looks lush! Shame all I have here is ryvita and bananas
