This Gin and Tonic Drizzle Cake is moist and zingy and has a subtle gin after taste after every delicious mouthful.
A couple of weeks ago one of my school friend Mum’s tagged me on Facebook on a gin and tonic cheesecake recipe video. Therefore, basically hinting that she would love for me to make one for her! Ha Ha! Anyway, a group of us school Mum’s meet up once a week/fortnight at each others homes and host a little tea, coffee and cake morning and last week I decided I would surprise Sarah with a Gin and Tonic Drizzle Cake.
This was an experimental cake, because I have never made one before. However, I basically used my lemon drizzle cake recipe, but used some lime zest in place of the lemon, and added some ready mixed Gordons gin and tonic to the batter and then to the drizzle syrup.
The result was a light, moist cake that was not over powering in gin (apologies to any gin lovers who were hoping to discreetly get tipsy eating a cake LOL)> However, ย it does contain a subtle gin aftertaste which is most enjoyable. I am not a big gin fan anymore (I blame a party I attended when I was about 18 when I got far too drunk on gin and tonics and could barely walk home afterwards ). Therefore, I was happy with the flavour of this cake.ย
The ladies what meet for coffee/tea and cake loved it too which I was happy about and, therefore, enabled me to make this cake into a blog post ๐
As I do not have any gin or indeed tonic in my house, I bought a can of pre mixed Gordon’s gin and tonic to use in this cake and there was enough with a little dram leftover – if you are that way inclined!
Here is the recipe for this Gin and Tonic Drizzle Cake
- 200g self raising flour
- 200g unsalted butter
- 200g caster sugar
- 4 eggs
- zest of ½ lime
- 50ml Gin and Tonic
- *For the drizzle*
- 2 tbsp gin and tonic
- 75g caster sugar
- zest of ½ lime
- Pre heat the oven to 180oC / 160oC (fan)
- Grease and line a loaf tin
- Cream together the butter and sugar until soft and pale
- Add the eggs, lime zest and 1 spoonful of the flour and beat together for a couple of minutes
- Then fold in the flour until just combined
- Add the gin and tonic and mix lightly through
- Pour into your prepared loaf tin and cook in the oven for approx 35-40 minutes until cooked right through
- A couple of minutes before cooking time has ended, place the sugar, the 2 tbsp of gin and tonic in a saucepan and heat gently until the sugar has dissolved and stir
- As soon as your cake is cooked, make lots of holes all over the top with a sharp knife and pour over the sauce and then grate the zest over the top
- Leave to cool completely before removing from your tin

Sounds great! I love gin, not so much gin&tonic. So, I would love to make the cake just with gin. :))

Sounds like my cup of tea, although I think I would probably up the gin ๐ Unlike yourself, i didn’t discover gin until my mid 20s and i can still remember the very first G&T I drank on a very hot summers evening it was so refreshing and I was hooked!
