Gin and Tonic Drizzle Cake

Ingredients
  • 200g self raising flour
  • 200g unsalted butter
  • 200g caster sugar
  • 4 eggs
  • zest of ½ lime
  • 50ml Gin and Tonic
  • *For the drizzle*
  • 2 tbsp gin and tonic
  • 75g caster sugar
  • zest of ½ lime
Instructions
  1. Pre heat the oven to 180oC / 160oC (fan)
  2. Grease and line a loaf tin
  3. Cream together the butter and sugar until soft and pale
  4. Add the eggs, lime zest and 1 spoonful of the flour and beat together for a couple of minutes
  5. Then fold in the flour until just combined
  6. Add the gin and tonic and mix lightly through
  7. Pour into your prepared loaf tin and cook in the oven for approx 35-40 minutes until cooked right through
  8. A couple of minutes before cooking time has ended, place the sugar, the 2 tbsp of gin and tonic in a saucepan and heat gently until the sugar has dissolved and stir
  9. As soon as your cake is cooked, make lots of holes all over the top with a sharp knife and pour over the sauce and then grate the zest over the top
  10. Leave to cool completely before removing from your tin
