Just after Jenson’s birthday back in March, I was sent an ice cream cake pan to review. It was a shame it arrived after and not before because his birthday party, for his theme was Ice Cream but it was my fault for not replying to the company quicker really!!
Anyway, since being in receipt of the cake pan I have just not had a chance to use it, until last weekend when I decided to give it a go. Now as regular readers of my blog might recall, I have blogged a few ice cream cake related recipes now, my Ice Cream Cone Cupcakes, Ice Cream Cake Pops and my Ice Cream Cone Pinatas but I have not made any rainbow ice cream cupcakes……until now 🙂
I did not have many colours in my baking drawer, but I found enough to make the cake batter go around all of the holes in my tin.
I added a spoonful of each colour to each cone shaped hol
and then baked them for 20-25 minutes until a knife came out clean. After leaving them to cool for about 30 minutes, they came out of the tin very easily – I used a lot of cake release before I added my multi coloured cake batters.
Once they were cold, I simply removed any excess cake so that the tops were level and then simply piped on vanilla flavoured buttercream, and added some sprinkles.
Here is how I made them if you fancy having a go yourself, and you have a special ice cream cake pan of course!!
- 200g unsalted butter
- 200g caster sugar
- 200g self raising flour
- 4 eggs
- 1 tsp vanilla essence
- 5 different food colours
- 1 tbsp cocoa powder
- 1 tub of Betty Crocker ready made vanilla flavoured buttercream
- edible stars
- cake release of extra butter for greasing
- pre heat the oven to 180oC / 160oC (fan)
- grease the cake pan really well
- cream the butter and sugar together for about 5 minutes until pale and soft
- add the eggs, vanilla essence and a spoonful of flour and beat well for a few minutes until light and airy
- Fold in the remaining flour
- divide the cake batter into 6 equal portions (bowls) and add some food colouring to each bowl and the cocoa powder to the 6th one and mix well
- add a 1 1/2 tsp of each coloured cake batter to each of the ice cream cavaties in the pan
- bake in the oven for about 25 minutes until risen and cooked all the way through
- leave to cool
- once cooled, level of the tops of each cake
- pour the buttercream into a piping bag and add a swirl of it to the top of each cake to look like a Mr Whippy ice cream
- then add some sprinkles to the top to decorate
These cakes turned out great: they tasted delicious and they looked so pretty too.
The boys enjoyed licking the helping me with the cake batter part lol and they loved seeing all of the different colours once the cake was cut open.
These pretty little cupcakes would be perfect for birthday parties or afternoon tea in the summer.
The cake pan was so easy to use too, as I have to admit I did not think the cakes would come out very easily once cooked, but they did which was a big relief!! Definately worth buying 🙂
