Since I joined Slimming World back in September, my consumption of pancakes has diminshed because they contain too many syns, well not so much the pancakes but the fillings!! However, with it being Pancake Day tomorrow how could I not make some pancakes at the weekend for my family?
Mind you, the boys are still not big fans of pancakes, although they both tried some Sunday and Jenson actually ate two, so maybe one of my children is at last a fan!! My OH prefers the crepe style pancake, all big and thin whereas I prefer American style ones, and to be honest I am better at making the latter which I why I make them and prefer them probably! However, Sunday breakfast the OH decided to show me how to make his preferred choice of pancake that he and the boys enjoyed, while I sat on and watched with my mushroom omlette!!
Still, pancake flipping is always fun isn’t it?

I do believe that the success of a good pancake is also in the quality of the pan in which you make them. The pan must be non stick so that the pancake can be easily turned over – or flipped if you are confident enough to do so. We used an amazing Regis Stone pan from JML which is so non stick that it does not require any fat or oil to cook with!
You do need to season the pan first, so I used some frylight and rubbed it on with some kitchen towel and my pan was ready to go. It was fantastic for making the pancakes (and my mushroom omlette) in, and even after use, the pan still looks pretty clean really – hardly any trace of it being used.
Priced at £19.99 I honestly believe that this is brilliant and a great pan to invest in if you have the money.
Anyway, this morning I decided to make some Mummy Mishaps style pancakes – smaller and thicker and made using some naughty ingredients, not very SW friendly it has to be said, but luckily for my weight loss journey I only tried a couple of mouthfuls!! But it was deeeeelicious!! I decided to make some peanut nut butter pancakes, but instead of spreading the topping on after the pancakes have been cooked, I thought I would incorporate them into the batter. Luckily it worked and because I used crunchy peanut butter it added texture to the pancakes when I bit into them, I tasted the peanuts. Then I stacked the pancakes into a tower with sliced banana between each layer and then poured over some chocolate sauce just for that extra decadence!!
Mmmmmmm – so if you like the sound of my Crunchy Peanut Butter Pancake Stack with fresh banana and chocolate sauce then here is how you can make them
- *FOR THE BATTER*
- 1 cup and a half of Carnation Cook with it cream (although milk would work too)
- 1 cup of plain flour
- 2 dessert spoons of crunchy peanut butter
- 1 egg
- *FOR THE TOPPINGS*
- 2 large bananas
- 100g milk chocolate
- 2-3 tbsp Carnation Cook with it cream
- Place the pancake batter ingredients into a bowl and whisk well to make a smooth batter (although using crunchy peanut butter means there will be nutty lumps!)
- pour a ladel full of batter into your pan and make your pancakes, turning or flipping once the underside is cooked and can be easily picked up with your fish slice!
- Repeat until all of the mixture is used
- Melt the chocolate and then add the extra Carnation Cook with it cream and stir well to make a sauce
- Slice the bananas
- Stack the pancakes, layer the banana slices inbetween each slice
- Then pour over the chocolate and tuck in!!!
These were flippin’ (ha ha!) yummy and it is only a shame that I could not eat very much!!!

oooh lovely pancakes! I bet you could make these slimming world friendly – can you have oats? I made some with ground oats at the weekend & the kids were none the wiser, lovely with an egg, healthy bacon & some pure maple syrup!

Wow they look amazing, minus the peanut butter of course cos that’s evil stuff! I love your concentration face too. Have you tried SW syn free pancakes?
