I was recently sent my monthly Degustabox UK goody box, and among the products included was a jar of Marmalade and straight away I decide to use this in a cake. Having made a lemon drizzle cake a couple of times (you can search on my blog if you fancy trying them – both are delicious), I had been toying with the idea of making a chocolate and orange version. Therefore, I thought I would make a chocolate chip loaf cake, with yogurt to make it lovely and moist inside, which I would add an orange marmalade syrup to once cooked, which would soak into the cake and leave a lovely tangy and zingy drizzle on the top. Mmmmmm!
Here is how I made my Chocolate Orange Marmalade Loaf Cake
- 200g self raising flour
- 115g unsalted butter
- 150g caster sugar
- 50g coca powder
- 2 eggs
- 100g yogurt - I used Mullerlight Vanilla
- 50g chocolate buttons
- 1 generous tbsp orange marmalade
- 1 heaped tsp caster sugar
- pre heat the oven to 180oC / 160 oC (fan)
- grease and line a 1lb loaf tin
- cream together the butter and sugar for about 5 minites until pale and creamy
- add the eggs and a spoonful of the flour and beat the mixture for a couple of minutes
- Add the remaining flour, the coa powder and the yogurt and mix until combined - being careful not to over do it
- Pour half the batter into the loaf tin, and then add ¾ of the chocolate buttons
- Add the remaining cake batter and smooth over the top
- Scatter the remaining chocolate buttons over the top and place into the oven
- Cook for about 45 - 50 minutes until risen, golden and cooked right through
- About 5 minutes before the cake is ready, place the marmalade and the sugar inot a small non stick pan and melt, stirring all the time
- If you prefer, remove the orange peel
- Remove the cake from the oven
- Make holes in the cooked cake and pour over the marmalade syrup
- Allow the cake to cool in the tin for at least 1 hour before removing from the tin
- Enjoy with a hot cup of tea
This was really nice – the sweetness of the sponge contrasted well with the sharpness of the tangy marmalade topping, and the chocolate buttons added a lovely texture. I took this to my baby and toddler playgroup (again!), and it went down VERY well with them, which confirms that it must taste nice!
