I was asked a short while ago if I would like to try Kelly’s ice cream. For those who are not in the know, Kelly’s ice cream is made in Cornwall and contains clotted cream – making it gorgeously rich and creamy and delicious! So, obviously, when asked if I would like to have some for free my reply was ‘yes’!
With it not really being the time of year for ice cream, Kelly’s are tempting us into still buying theirs by featuring a selection of tasty recipes on their website to complement their ice creams. Ice cream does go well with hot desserts and with this in mind I decided to create a mummy mishaps family friendly pudding using Kelly’s ice cream. Having browsed the freezer ailse of my local supermarket I decided to go with Kelly’s Clotted Cream & Honeycombe ice cream, and then I thought that chocolate brownie would go very nicely with it , all that oozy hot chocolate fudgy brownie topped with melted creamy ice cream with crunchy honeycombe pieces – mmmmmm! Then I thought I would serve the dessert as a sundae, as the brownie did not serve well as perfect squares! It is very easy it is to make too. I cheated and used a brownie mix because sometimes life is too short and I keep one handy because my nephew has a dairy intolerance and this is something he is able to eat.
To make this you will need:
1 packet of chocolate fudge brownie mix (I used Betty Crocker)
1 egg, oil and water (as per the pack directions)
Kelly’s Honeycombe Ice Cream
Squirty Cream (optional – I had some in my fridge)
1 brownie tin, greased and lined
sundae glasses
To make this you need to:
Pre-heat the oven to 160oC/ 140oC (fan)
Make the brownie as per the directions on the packet
Cook in the oven for approx 25 minutes until a knife comes out almost clean
Layer a sundae glass with the brownie, some ice cream, soe more brownie, some more ice cream and then top with some squirty cream
Serve and enjoy (if eating once the brownie is cooled, you can reheat it in the microwave for 30 secs)
A delicious dessert for winter and very quick and easy to prepare …….. and demolish!

Kelly’s is my favourite vanilla ice-cream, it is so deliciously smooth and sumptuous. Love the styling in the glass and the dribbly cream.
