I made a panettone for the first time last week which was delicious but it was also huge and with only me really eating it, it was not going to stay fresh for long, After 3 days of eating it at least twice a day, I decided to make a bread pudding from the left overs – waste not want not and all that! I also had a tub of Drink Me Chai Latte sent to me via Degustaboxuk – a new to the UK food subsciption delivery service where each month a new box is sent to you filled with mystery food items (more about this below). So using what I had at the disposal of my kitchen cupboards, I took my leftover panettone, a jar of mincemeat, some chai latte mix, milk, eggs, white chocolate and an orange and made my take on a festive bread pudding – Chai Spiced Panettone Pudding and it is deeeeeelicious and soooo easy to make. Because mincemeat contains fat this recipe does not require any butter and because chai latte is spiced as well as the mincemeat no spices are required either. And because the panettone contained fruit , no extra fruit was needed either! Simple – just as I like it.
Here is how I made the pudding:
- 500g panettone
- 1 jar of mincemeat
- 600ml milk
- 2 tbsp chai latte powder
- 2 eggs
- zest of 1 clementine
- 100g white chocolate drops (optional)
- 100g demera sugar, plus extra for topping the pudding
- Pre heat the oven to 180oC / 160oC (fan)
- Grease and line a rectangualr dish - I used a 12 inch one
- Break up the panettone into chunks and place into a large bowl
- Warm up the milk until it is tepid and then stir in the chai latte powder
- Pour over the panettone and using a fork, mash it up roughly
- Beat the eggs and add to the panettone
- Add the mincemeat, the clementine zest and the sugar also and mix well
- Leave the mushy panettone for about 15 minutes to soak up the liquid
- After the 15 minutes pour into the prepared tin and ensure it is evenly distributed and then scatter some demera sugar along the top - about 2 handfuls approx
- Cook in the oven for about an hour - the pudding needs to be set and not wobble anymore
- Leave to cool before cutting into squares
- I decorated mine with a dusting of icing sugar
- This is sooo yummy served warm but is equally delicious cold too.
