As regular readers of my blog will know, and anyone who follows my instagram account, I am often devising baking ways to use up over ripe bananas. I like using bananas in my cakes and bakes because not only do they add natural sweetness, and their own natural goodness, but it is another way to get a little fruit into my boys.
I have used bananas in flapjacks before, as they work really well as a kind of natural glue to the oats. This time around I have added extra nuts to give the bars some added texture. If your children do not like the texture of nuts, like mine, you could add raisins instead.
These bars may look a little drab in colour, but they tasted lovely and were so easy to make using store cupboard, and fruit bowl, ingredients. Of course by using peanut butter, chocolate spread and carob syrup means that these oat bars are (refined) sugar and dairy free.
Here is the recipe for my Sugar-Free and Dairy-Free Banana and Peanut Butter Oat Bars
- 300g poridge oats
- 345g jar of crunch peanut butter
- 100ml carob fruit syrup
- 1 tbsp chocolate spread
- 2 ripe bananas, roughly sliced
- 25g dried cranberries
- 50g chopped nuts of your choice
- Pre heat the oven to 190oC / 170oC (fan)
- Grease and line a large square or rectangular brownie tin (I used a loaf tin to make deep bars but you can choose)
- Place the peanut butter, carob fruit syrup, chocolate spread and bananas in a pan over a low heat and melt while stirring occasionally. The banana will mush into the the other ingredients.
- Place the oats in a large bowl with the nuts, then pour over the gloopy peanut butter sauce and stir well
- Pour into your baking tin and cook for about 25-30 minutes if you use a brownie tin and 40 minutes if you use a loaf tin, until golden brown
- Leave to cool before lifting out the oat bar and then cut into smaller bars
