I was recently sent a Crock-Pot 3.5L and you may recall that I posted a recipe which I made using this to slow cook a butternut squash in. Well, as part of the review that I did, I was asked along with some other bloggers to provide an ingredients each towards making a Collective Crock recipe.
The ingredients suggested were:
· Chopped tomatoes
· Sausage
· Butterbeans
· Kale
· Ale
· Butternut Squash
· Sweet Potato
· Onions (my contribution)
The Crock-Pot UK team came up with a recipe for a Sweet Potato topped Sausage Cassoulet using these ingredients
I decided to have a go at this in my own crock -pot, but, as usual, I made a few changes to the recipe based on ingredients I had in my kitchen and to make the meal more to the liking of my family.
For example, instead of butter beans I added baked beans, and instead of honey I used some maple syrup and rather than top my casserole with sweet potato I served in on a bed of sweet potato mash instead.
This is an easy recipe and very comforting for this time of year. Here is how I made it
- 8 sausages (I used beef but use any flavour of your choice)
- 1 tsp oil
- 1 large onion, peeled and deiced finely
- 1 tin of tomatoes
- 1 tbsp tomato puree
- 1 tbsp maple syrup
- 1 tin of baked beans
- 250ml light ale
- 1 beef stock cube
- 2 tsp beef gravy granules
- 1 butternut squash, peeled, deseeded and diced into small cubes
- 1 tsp garlic granules
- 1 tsp thyme
- 1 tsp paprika
- 2-3 handfuls of kale
- sweet potatoes and butter
- heat the oil over a moderate heat, in a non tick pan and then brown the sausages for about 5 minutes
- crumble the stock cube over the sausages and stir
- turn the heat up and add the ale, the tomatoes, tomato puree, baked beans, maple syrup, gravy granules, thyme, garlic, paprika and let it boil for 5 minutes
- pour into your slow cooker/ crock pot
- add the onions and butternut squash and stir well
- place the kale across the top
- add the lid and cook on high for 4 hours (or 8 on low)
- stir through the kale
- serve with some sweet potato mash
This tasted delicious and it is perfect comfort food for the cold nights.
