I love the fact that now we are at the end of November, I can start making and posting Christmas related recipes. Last week I made a chocolate traybake cake and seeing as I had some peppermint candy canes left in my cupboard, from making a peppermint cake a few weeks ago, I decided to add them to the topping for a Christmassy flavour. Not only do the candy canes taste nice mixed with chocolate on a cake, but it looks pretty too with the pink, red and white minty shards scattered across the top of a chocolate covered and flavoured cake – yum!
I based the recipe for this chocolate traybake on a chocolate brownie recipe found in a book I was sent to review called The Weekend Cook I simply doubled the quantities and amended the recipe slightly to make a light and airy cake which was perfect for the mums at the toddler group last Tuesday.
It was very easy to make and here is the recipe for my Chocolate and Peppermint Traybake cake.
- 175g milk chocolate
- 175g dark chocolate
- 350g butter
- 300g caster sugar
- 6 eggs, beaten
- 225g self raising flour
- 25g cocoa powder
- *For The Topping*
- 3 peppermint candy canes
- 200g milk chocolate
- 50g white chocolate
- pre heat the oven to 180oC / 160oC (fan)
- grease and line a large brownie tin - I used a 28cm one
- melt the butter and the chocolate - I did mine in the microwave in 30 second bursts
- stir and leave to one side for 5 minutes to cool
- in a large bowl, add the flour, cocoa powder, sugar and eggs
- pour in the cooled chocolate mixture and beat well
- pour into your prepared tin and bake in the oven for 35-40 minutes until cooked right through
- allow to cool in the tin before turning out
- melt the milk and white chocolate, separately
- spread the milk chocolate over the top of the cold cake and then drizzle the white chocolate across the top
- crush the peppermint canes and sprinkle over the chocolate topping
- leave to cool and then cut into squares to serve.
It rose beautifully and as you can see from the photos the squares were huge! It tasted lovely too!
