I do enjoy the challenge of creating something from the content of my Degustabox Uk box each month. Some boxes can take quite a bit of brainstorming before a recipe idea pops into my head, but other times, such as this months, it is very easy to see what I could make. As soon as I saw the products inside my recent box, I knew that flapjacks would be baked using the gluten free oats, freeze dried apricots and the carob coated super seed bars.
I did need to add extra oats to the ones I was sent as there were not enough. I simply blitzed the carob seedy bars in my food processor to make crumbs which I added to the party mixture for some added texture and crunch, and poured in the freeze dried apricot pieces.
This flapjack recipe was easily made, and very easily eaten!! Here is how I made it
- 300g poridge oats
- 200ml golden syrup
- 100ml honey
- 225g unsalted butter
- 16g freeze dried apricots
- 5 x 40g 9 Bar Original Carob Hit Bars - blitzed into course crumbs
- Pre heat the oven to 190oC / 170oC (fan)
- Grease and line a square or rectangular brownie tin
- Place the butter, golden syrup and honey in a pan over a low heat and melt while stirring occasionally
- Place the oats in a large bowl, with the apricots and the carob bar crumbs, and pour over the gloopy butter and syrup sauce and stir well
- Pour into your baking tin and cook for about 25-30 minutes minutes until golden brown
- Using a sharp knife, mark your flapjack into portions
- Leave to cool before lifting out the flapjack and then cutting into bars
Yummy! Packed full of delicious energy boosting ingredients these would make great lunchbox fillers or after school snacks, or maybe even an on-the-go breakfast bar.
