Blueberry Muffins

I like using up over ripe fruit in recipes as I do hate waste especially with fruit because it can be expensive. I do find it annoying when fruit becomes unedible very quickly, BUT of course this does make it perfect for using in baking instead. 

I am always using up ripe bananas in my cakes, and I feel these banana bakes take over my instagram feed, because I think I make something with bananas every week! However, occasionaly, I do have other fruit such as blueberries that have gone too squishy to be eaten by hand but, are ideal for adding to muffins! I love blueberry muffins – so moist and fruity and good for me owing to the fruit content ha ha!

Here is a recipe for some quick and easy blueberry muffins.

Ingredients

1. 200g unsalted butter
2. 200g caster sugar
3. 200g self raising flour
4. 4 eggs
5. 1 tsp vanilla essence
6. 50g blueberries

Instructions

1. pre heat the oven to 180oC / 160oC (fan)
2. line a muffin tin with 1pprox 16 cup cake cases
3. cream the butter and sugar together until pale and soft
4. meanwhile place the blueberries in a bowl and use a bit of the flour to dust them with
5. once the butter and sugar is creamy, add the 4 eggs, 1 tbsp of flour and the vanilla essence and bet well for a few minutes
6. fold in the flour
7. then add the blueberries and lightly mix
8. divide the batter between your cup cake cases
9. bake in the oven for about 20-22 minutes
10. leave to cool before tucking in 🙂
