Once again last week I found myself with some over ripe bananas and once again I was faced with what kind of cake to make to use them up and not waste them. I was sent some yummy chocolate products the week before from a John Lewis hamper ( see below for more information), and there were some jumbo chocolate raisins and I thought that they might work nicely in a banana cake.
And they did – so here is my banana and chocolate raisin loaf cake recipe
- 250g self raising flour
- 115ml vegetable oil
- 200g caster sugar
- 2 eggs
- 50g yogurt
- 2 x small over ripe bananas
- 1 packet of jumbo sized chooclate coated raisins (optional as raisins or chocolate buttons would also work)
- pre heat the oven to 180oC / 160 oC (fan)
- grease and line a 1lb loaf tin
- cream together the oil, banana and sugar for about 5 minutes until pale and creamy
- add the eggs and a spoonful of the flour and beat the mixture for a couple of minutes
- Add the remaining flour and the yogurt and mix until combined - being careful not to over do it
- Then lightly fold in the chocolate raisins
- Pour into the loaf tin and smooth over the top
- Cook for about 45 - 50 minutes until risen, golden and cooked right through
- Allow to cool and then remove from the tin and place on a wire rack
- Enjoy with a hot cup of tea
The jumbo chocolate raisins, as featured in my recipe, were taken from one of two AMAZING hampers that I was surprised with the other week. One of these was the Chocoholic Cube Hamper the which is just a chocolate lovers perfect gift box.’ ?
It not only comes in a festive outer box, but all of the products sit inside a reusable seagrass storage cube, which will look great in my bathroom in which to sit my bathing products, (once I have taken out all of the chocolate items of course!)
I was also sent a Mediterranean Odyssey Hamper which is filled with some gorgeous food products which I know I will enjoy cooking with and of course eating! This will come in very handy with Christmas coming for entertaining guests with. And the trundle will be lovely for photo styling!
