In my life B.C (before children!), I used to love going for a meal at our local Mexican restuarant. The food was tasty, the atmosphere was relaxed and fun, and the prices were very reasonable. The OH and I used to eat out there a lot and sometimes we were allowed to have a take out, as he was friends with the ex-owner. The only reason we do not eat there anymore, asides from the fact that we just do ot eat out hardly ever now that we are parents, is that Mexican food is not very low in calories, and I dread to think how many were consumed on a night out eating there!
Whenever we visited, my OH would always order the same starter, tortilla breaded brie which was served with a sweet chili dipping sauce. Lovely but very fattening and something he has not eaten for a loooong time! I decided to give him a little treat the other day, and surprised him with my own version for lunch. I had some Walkers Market Deli Tortilla Chips flavoured with Roasted Red Chilli with Mediterranean Sundried Tomato, which I thought would complement the brie perfectly. It was very easy to make – I mean, I had no idea what I was doing but figured it would be the same as making breaded chicken when coating the cheese!
Anywaym here is my version of some tortilla breaded brie, or as I like to call it Baked Brie with a crushed tortilla chip crust
I made 1 portion but obviously just make more per person who is eating it – I allowed for 2 brie wedges as a portion.
You will need:
2 small brie portions
1/2 bag of Walkers Market Deli Tortilla Chips flavoured with Roasted Red Chilli with Mediterranean Sundried Tomato
1 egg, beaten
To serve:
Salad garnish
Sweet chili dipping sauce
Crusty bread
Method:
Pre heat the oven to 200oC – 180oC (fan)
Line a baking sheet with greaseproof paper
Crush the tortilla chips with a rolling pin to make a fine crumb
Lay the crumbs on a large plate
Put the beaten egg in a bowl
Remove the white bits from the brie
Dip the brie in the egg so it is all covered
Roll in the tortilla crumbs
Place on the baking tray
Repeat with the next brie wedge
Cook in the oven for 5 minutes
Serve with your garnish
I must have done alright because I was told that they were delicious and please could I make them again…..and more often!!
My breaded brie were coated with the new Walkers Deli Tortilla Chips flavoured with Roasted Red Chilli with Mediterranean, a new range of savoury snacks from Walkers which are more ‘grown up’ and posh crisps. These are the type of crisps that I would get out once my boys are in bed!! The range of flavours available are really appealing to me, because they are flavours I enjoy using in my cooking, like the pitta chips with a roasted garlic and mediterranean herbs coating – yummy!
The flame grilled spanish chorizo with roasted onions crisps are divine!!!
With Christmas just around the corner, this range of Market Deli crisps would be perfect to hand out to guests or just to put out in the evening while watching a Christmas film.
Priced at £2.39 for the large sharing bags and 83p for the single bags, I think these are delicious crisps which punch such flavour and I for one will be adding these to my Christmas snack list!
