I love fish and would eat a lot more if my family were not so fussy about eating it! My OH will only eat cod encased in batter or breadcrumbs, so fish fingers fish cakes or battered cod for him then! The boys are not much better……although occasionaly I have sneaked some tuna pasta bake into them without them realising that they are eating fish!
I always have a tin of salmon, pilchards and tuna in my kitchen cupboard because there is always something I can rustle up using fish. I had my Mum, Step Dad and Nanny visit me last Saturday and I wanted to make a dinner that was healthy, nutritious and tasty (and Slimming World friendly for me!) and quick. Therefore, a tuna pasta bake it was because they love tuna as much as me. I added lots of veggies to the sauce too to help boost the healthy factor, and it took next to no time to make from start to plate. Here is how I made it
- 2 x tins of tuna in tomato sauce
- 1 x tin of tuna in brine (drained and rinsed before use)
- 1 x small tin of sweetcorn
- 1 x carton of passatta
- 1 x tin of chopped tomatoes with mixed herbs
- some broccoli florets cut into small bite sized pieces
- 1 x red pepper cut into small pieces
- 1 x onion , finely chopped
- 50g mushrooms cut into small pieces
- 1 leek cut into small pieces
- 250g pasta - I used fusilli
- 25g mozarella, torn into small pieces
- 25g cheddar, grated
- 1 tbsp olive oil
- garlic
- Par boil the broccolli in some hot water for a few minutes ot soften it, then leave until later
- Cook your pasta as per the instructions on the pack
- heat the oil and garlic and sweat off the onion and leek for a few minutes,
- Add the peppers and mushrooms to the onions and leaks and cook for 5 minutes until they soften
- Add the pasatta and chopped tomatoes and extra herbs if you want (I like using basil and oregano) and stir, then add the sweetcorn and broccoli and tuna and mix again and leave to simmer while you wait for the pasta to cook (and add some black pepper for seasoning) - 10 minutes should be fine
- Pre heat the oven to 180oC / 160oC (fan)
- Take a large oven dish and I squirted a little fry light inside it to grease it
- Once the pasta is cooked, drain well and mix with the tomato and tuna sauce
- Pour into your oven dish, and top with the cheeses
- Bake in the oven for 20 minutes OR you can just pop it under a hot grill to melt and brown the cheese of you are short of time
- Serve with some garlic bread and a salad garnish
Deeeeeeeeeeelicious! Everyone enjoyed it, even the boys who tried some (OH had meatballs and pasta – you cant get an old dog to like fish lol!) and there was even enough for me to have some leftovers the next day! Perfect tasty comfort food – yummy! I actually made my sauce the night before, to allow it a chance to get all stodgy in the fridge overnight, as this meant I only had to cook the pasta the next day, when my family were here, and then pop it into the hot oven. But this is optional of course!
