1 x tin of tuna in brine (drained and rinsed before use)
1 x small tin of sweetcorn
1 x carton of passatta
1 x tin of chopped tomatoes with mixed herbs
some broccoli florets cut into small bite sized pieces
1 x red pepper cut into small pieces
1 x onion , finely chopped
50g mushrooms cut into small pieces
1 leek cut into small pieces
250g pasta - I used fusilli
25g mozarella, torn into small pieces
25g cheddar, grated
1 tbsp olive oil

Instructions
Par boil the broccolli in some hot water for a few minutes ot soften it, then leave until later
Cook your pasta as per the instructions on the pack
heat the oil and garlic and sweat off the onion and leek for a few minutes,
Add the peppers and mushrooms to the onions and leaks and cook for 5 minutes until they soften
Add the pasatta and chopped tomatoes and extra herbs if you want (I like using basil and oregano) and stir, then add the sweetcorn and broccoli and tuna and mix again and leave to simmer while you wait for the pasta to cook (and add some black pepper for seasoning) - 10 minutes should be fine
Pre heat the oven to 180oC / 160oC (fan)
Take a large oven dish and I squirted a little fry light inside it to grease it
Once the pasta is cooked, drain well and mix with the tomato and tuna sauce
Pour into your oven dish, and top with the cheeses
Bake in the oven for 20 minutes OR you can just pop it under a hot grill to melt and brown the cheese of you are short of time
Serve with some garlic bread and a salad garnish
