With Halloween fast approaching, it is always fun to bake some fun cakes and add some orange frosting and some spooky inspired decorations. Cupcakes are so easy to make and fast to bake, and all you need is to add some orange buttercream and some sweets and you have some easy halloween cakes! Spook-tacular!
Here are some I knocked up before school one day last week – I made and baked them after breakfast, and then added the frosting when I got home from dropping Burton off. Easy! Here is how I made them
- 250g unsalted butter
- 250g caster sugar
- 200g self raising flour
- 50g cocoa powder
- 5 eggs
- *FOR THE ORANGE FROSTING*
- 250g butter
- 100g cream cheese
- 500g icing sugar
- orange food colouring
- *DECORATIONS*
- Large bag of Rowntrees Randoms Spooky Mix
- Pre heat the oven to 180oC /160oC (fan)
- LIne 2 muffin tins with 24 cupcake cases
- Cream the butter and sugar together for about 5 minutes
- Add the eggs and 2 tbsp of flour (to prevent curdling) and beat well for a further 2 minutes
- Fold in the remaining flour and the cocoa powder
- Pour into the cupcake cases
- Bake in the oven for approx 20-25 minutes until cooked right through
- Remove from the oven and allow to cool completely before adding the buttercream
- *TO MAKE THE FROSTING*
- Beat the butter in a bowl - I did mine in my Kenwood mixer - to soften it
- Add the cream cheese and half of the icing sugar and beat, then adf the remaining icing sugar and the some orange food colouring - add as much as you think you need to give the shade of orange you prefer
- Mix until you have a lovely smooth consistency
- Fill 2 piping bags (I mine are small)
- Top each cupcake
- Then add a sweet to each one as decoration and your easy Halloween cakes are ready
That’s it, see, I said they were easy
Luckily for me I had a PTA meeting and a toddler group to attend the next day, so they were all eaten up by some very willing teachers and parents!!
