I was recently sent a book to review called Marshmallows Made Marvellous (sub title Home-Made Pillows Of Sugar) and I have to admit to being a little scared. I mean to make marshmallows from scratch eeeeeek especially as it involves using a sugar thermometer!!! Anyway, because the book is full of such yummy sounding recipes, each accompanied by mouth watering photographs I decided to bite the bullet and give it a go. Afterall, as the strap line at the bottom of the page says: Anyone can make these!
I decided to use the Cookies and Cream Marshmallow Recipe and as usual adapt it to my own version. Hence, I made Oreo Marshmallows . I mean what is not to like about those cookies, especially when topped with fluffy and gooey mallow? It was a recipe I really wanted to make and eat for myself! Here is how I made them.
- oil for greasing
- parchment paper
- 8 x 8 inch square baking tin
- sugar thermometer
- 2 tsp cornflour
- 2 tsp icing sugar
- 450g caster sugar
- 200ml cold water
- 100ml hot water
- 25g (2 sachets) powdered gelatine
- 2 large egg whites
- 2 tsp vanilla extract
- approx 16 oero cookies
- Line the baking tray with some parchment paper and lightly grease it all over with the oil
- Mix the cornflour and icing sugar together and pass through a sieve. Dust the baking tray with some of it
- Place as many oreo biscuits as you need to cover the bottom of the baking tin
- Place and caster sugar and cold water into a deep saucepan and heat gently to dissolve the sugar
- Add your thermometer and bring the syrup to the boil - DO NOT stir - and leave to 'cook' for approx 5 minutes until the temperature reaches to about 120oC
- While this is doing, dissolve the gelatine in the hot water
- Also whisk the egg whites until they hold stiff peaks
- As soon as the syrup reaches the correct temperature, remove the thermometer and add the gelatine mixture (carefully) and leave to stand for a couple for minutes.
- Then carefully pour the liquid into a heat resistant jug
- Put the whisk on low and gradually add the hot syrup to the egg whites in a thin stream, whiskign the whole time. Then continue to whisk for about 5 more minutes until the mallow is glossy and thicker.
- Then whisk in the vanilla extract
- Pour the mixture over the oero biscuit base
- Then crush thr remaining oreo cookies to make course crumbs and scatter these over the top off the mallow
- Leave the mallow in a dry and cold place (I left mine inside my front porch) to set for 4-5 hours
- Once set and ready, carefully ease the parchment paper from around it and cut into squares.
- Using a deep tin meant mine were very big! But that is fine with me 🙂
- Keep in an airtight container for up to 5 days
I have to say that these turned out much better than I expected and looked amazing! The mashmallow is not like shop bought conbfectionary mallow, it is much softer and melt in the mouth. I guess it can be likended to the mallow inside a walnut whip or good quality chocolate tea cake. It was delicious and with the oreo base and topping aswell, well it was really very nice!
Making homemade marshmallows is actually a lot easier than I thought and the effort is well worth it because the finished mallow is much better than the bought ones you buy in a packet. I recomend trying to make your own and I also would recommend the book too.
