Last week I saw this recipe for individual bread and butter puddings. Now I have to be honest I don’t make this dessert, because no one in my house will eat it. My boys did when they were little but now they just turn their noses up at it! Making a dessert like this is very frugal because it is using up left over bread and requires ingredients that most of us carry in our kitchen cupboards.
Seeing the recipe last week got me thinking about making brioche bread and butter puddings as I had some sliced brioche left in my cupboard. I also found some fruit sliced loaf and thought how nice that would be as a buttery pudding too. Then I wondered about making them in a muffin tin as a different way of making individual bread and butter puddings.
It worked and I made three versions all very easy to make and this is how I made them.

Ingredients:
8 slices of brioche loaf
4 slices of fruit loaf
jam (any flavour)
chocolate spread
butter/buttery spread
2 eggs
500ml milk
1 tsp sugar
cream or custard for serving
Method:
pre heat the oven to 180oC/160oC fan
lightly grease your muffin tin
Pour the milk into a jug and add the eggs and sugar and beat well and leave to stand
spread jam on 4 slices of the brioche
spread chocolate spread on the other 4 slices of the brioche
spread butter on the fruit loaf slices
using a large round pastry cutter, cut a hole in 2 of the jam slices, 2 of the chocolate slices and 2 of the fruit loaf slices
add the bread disks to the bottom of each muffin tin hole
then cut the remaining slices into four squares per slice
add 4 jam squares to each jam round, 4 chocolate squares to each chocolate round and 4 fruit squares to each fruity round to fill each muffin hole
Then pour the milk mixture into each bread pudding – the mixture needs to be divided between all 6 muffin holes
Place in the oven and cook for 25 minutes until set
Remove from the oven and allow to cool slightly before removing (take care as hot jam is like molten lava!)
Best eaten while hot/warm and I had mine with a little (light) double cream
The brioche ones were nice and worked well as they are already buttery, but my favourite were the ones made from the fruit loaf! Delicious!

i found the jam one a little too sweet but brioche made a nice base but the fruit loaf was just yuuuuumy! and thank YOU x
This is really quite funny as I bought a loaf of sliced brioche (first time ever) & combined it with Nutella…I have that post in draft today …who would’ve thought we would be sliced brioche twins too! By the way, my kids would definitely eat this! x
