My youngest loves ice cream and frozen yogurts so in an attempt to make some homemade lollies I came up with these jelly lollies, made by combining jelly and fromage frais. I remember when I was a child my Mum mixing jelly with condensed milk to make a similar pudding.
I chose strawberry as this was the only flavour jelly I had to hand, but it would work equally as well with other jellies and other flavoured fromage frais.
You will need:
Makes 4
1 packet of jelly (strawberry)
120ml of fromage frais (strawberry)
water
lollypop moulds
lollypop moulds
Then you need to:
Cut the jelly and place in a microwave bowl
together with 100ml boiling water and stir until melted
OR
place in your microwave for 1 minute on full power to melt the jelly completely and stir
Allow to cool slightly for about 5 minutes and then stir in the fromage frais and mix well to avoid white lumps
Then pour into your moulds
Then add your lids and place in the fridge for at least an hour.
Removing them is a little tricky (probably my moulds as the lid with the stick came out without the lolly attached!) but they did come out and were quite wobbly like a jelly but firmer because of the fromage frais
(I added my own wooden lolly sticks)
They taste nice – creamy, very tangy and wobbly!
The proof is in the eating!
To make them a little easier on the eye and add some texture you could decorate them with some cake decorations eg. hundreds and thousands
They are so quick and easy to make and there are some many flavours that could be made with or without different decorations added – why not make some yourself?

genius idea Jenny! I think my Mum made the same dessert – I think she made it like a cheesecake on a biscuit base.

no surprise there then! see we were almost twins back then…..you know when we first got our toasted sandwich maker my brother made me one that was in the book that came with it – cornflake & golden syrup filling!! x
