Chocolate, Coffee and Chilli Cake #BakeoftheWeek

This Chocolate, Coffee and Chilli Cake might sound like a strange combination, but these ingredients do work well together in cake form. Please read on for my recipe.

I was recently sent a Ninja Coffee Bar to review, following its launch back in the summer, an event I was unable to attend due to its locality (London), lack of childcare and the cost of a train! However, the lovely PR people took me up on my offer of carrying out a review at home and I am now the very happy owner of this fantastic coffee maker.

I will be posting a more in depth review at a later date, but needless to say I am LOVING my home brewed coffee lattes each day, and I love how easy it is to use too, with its glass carafe and intelligent warming plate which keeps my coffee warm for seconds, this is not just a coffee machine, it is a coffee bar. As I say, more about it to follow soon.

However, this is #BakeoftheWeek so let’s get down to business and talk about cake! So last weekend while drinking a cup of my freshly brewed coffee, I took a look through the recipe booked which accompanies the Ninja Coffee Bar and I decided there and then to make a cake inspired by one of the coffee recipes. I found a coffee recipe entitled Mexican Spiced Coffee and I thought that the spices would work in a cake, and that the dark sponge topped with a white icing would look a little like a cup of frothy coffee too.

This dark Chocolate Coffee and Chilli cake is enhanced by a shot of espresso and some chilli powder, ground ginger and cinnamon, and topped with some cooling cinnamon topped icing.

As with all my bakes, this is an easy loaf cake to make but the flavours are really nice and work so well together, and make for a very tasty cake with so much dept of flavour.

Chocolate, Coffee and Chilli Cake

Here is the recipe for this Chocolate, Coffee and Chilli Cake if you fancy making it yourself (obviously if you don’t own a coffee machine, just use a shot of strong instant coffee instead).

  • 115g unsalted butter
  • 200g light brown sugar
  • 2 eggs
  • 200g self raising flour
  • 50g cocoa powder
  • 1 shot (50ml) strong espresso
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ½ tsp chilli powder
  • 100g condensed milk
  • *Icing*
  • 2-3 tbsp icing sugar
  • cold water - enough to make a thick paste
  • cinnamon
Instructions
  1. pre heat the oven to 180oC / 160oC (fan)
  2. grease and line a 1lb loaf tin
  3. Cream the butter and sugar together until light and fluffy
  4. add the eggs and spices and beat well
  5. add 1 spoonful of flour and the espresso shot and beat again
  6. add the remaining flour and cocoa powder and the condensed milk and beat until well combined
  7. pour into the loaf tin and bake for 40-50 minutes until cooked right through and risen
  8. Once cooled remove from the tin
  9. Make the icing and spread over the top of the cake and sprinkle with some cinnamon

  1. I had chocolate with coffee, chocolate with chilli, but I didn’t have chocolate, coffee and chilli in the same cake. I would love to try it, sounds fab. x
