With both boys at school now, I am faced with two very hungry children when we get home from school. Some nights we bypass having a snack before tea because according to them ” we are starving Mummy”, so I crack on and make them an early tea instead. Therefore, with them both sat at the table waiting for me to make their tea appear on the table, I want something that is quick to prepare and is also tasty and nutritious.
I had some Bernard Matthew sweet chilli turkey breast pieces in my fridge which the boys LOVE, as do I!
I decided to make a quick sweet chilli turkey egg fried rice using some store cupboard ingredients, and honestly this meal took less than 10 minutes to prepare and cook until it was ready to serve on the table! I used microwave rice pouches to save time, but obviously you could use cooked rice done the traditional way.
Now that is fast food! I let the boys help me make their tea as I thought it would encourage them to try it and because it is the type of meal that is easy for them to assist with.
To make this meal idea you will need the following:
(serves 2 adults or 1 adult and 2 children)
- 200g Bernard Matthews sweet chilli turkey breast pieces
- a drizzle of olive oil (I used a garlic infused one)
- 2 large eggs, beaten
- 250g pouch microwavable basmati rice, heated in the microwave or cooked rice
- 1 onion thinly chopped
- handful of frozen peas
- dash of black pepper
- Drizzle of Sweet chilli sauce (optional)
- Add the oil to a non stick pan over a moderate heat
- Add the chopped onions and saute for a few minutes, until they start to soften
- While the onions are cooking, crack your eggs into a bowl and beat with a fork and add some black pepper
- Add a handful of frozen peas and mix well
- Add the beaten eggs to the onions and peas, stirring all the time until scrambled and dry
- Add the rice and really mix well
- Then add the Sweet Chilli Turkey pieces and stir through for 3-4 minutes
- Remove from the heat as it is ready to serve
- You can serve with some sweet chilli sauce if you like (or maybe some soy sauce)

I often keep some Bernard Matthews turkey or chicken breast pieces in my fridge because they are ideal for making quick snacks or meals. We often use them in wraps and as pizza toppings.

Having been asked to continue being on the Bernard Matthews Family Panel, the boys and I were sent some special viewing goggles to watch a little video showing the new branding. The boys enjoyed wearing the goggles – and have been modelling them even while watching the TV!!
The new look branding is much more contemporary than its predecessor, and I really like the more cartoon look with little sketches and doodles of countryside images. It is playful and fun, which is what food for children should be aswell as being tasty and nutritious.

yes it would Joy – it really is so quick to make and still homemade and healthy, and cheaper than a ready made sandwich or Maccy D’s!!! (not saying you eat any of those lol!) x

I do love fried rice. There’s something very comforting about it! We’re suckers for BM turkey ham too – one of lifes little pleasures!
