It has to be said that the summer holidays have not really summed up the word they have been named after, i.e. ‘summer’, because we have had a lot of rain. Wet days are ok every now and then when you get the chance to enjoy some outdoor fun on the other days, but when the rain falls for a few days in a row, it can be hard to keep two lively boys entertained when they need to burn off some steam!
Hurrah for baking! My two relish the opportunity to get their aprons on and bake some goodies in the kitchen, and I decided the other day, with it being Biscuit week on the GBBO, that I would get them to make some easy Smarties Cookies. I make these cookies a lot, and I have made them for Burton’s teachers at the end of each school year, and I have even made them with mini eggs instead of Smarties at Easter. The great thing about these cookies, is that they are made up of only 4 ingredients, making them easy and quick to put together and bake, and perfect for children to have a go at making.
First up though we must wash our hands and wipe down our work surface and put our aprons on. Washing hands is always more exciting when there is a new soap dispenser in the bathroom! Suddenly it is a task they enjoy and to take their time over (and even do more than once must to make sure they are clean mummy!)
With all our preparations in place, it was time to get baking! Here is my quick and easy, 4 ingredient Smarties Cookie recipe
- 100g flour
- 1 egg
- 2 tbsp chocolate spread
- 1 /1/2 tubes of Smarties
- pre heat the oven to 160oC / 180oC (fan)
- line 1 large or 2 small baking tray with parchment paper
- place the flour, eggs and chocolate spread in a large mixing bowl and give it a good stir until it all combines and turns into a chocolatey mixture
- add the Smarties and mix again
- using your hands, take some of the mixture and shape into round and place on the baking sheet
- repeat leaving lots of space between each cookie
- you should end up with approx 12 cookies
- bake in the oven for 8-10 minutes
- leave to cool and then transfer to a tin
The boys worked so well together making these cookies – great team effort! They were a little thinner than I make them myself, so more crisp than chewy (I prefer a chewier cookie personally), but they were lovely anyway and the boys were very proud of their efforts 🙂 and tucked in straight away!
I was sent a selection of cleaning items from Dettol for the purpose of a review. Never has a soap dispenser caused so much excitement in my house before!
