So Wimbledon is finished for another year, and with it comes the wet weather that our British summers are full off! However, even with the tennis over and the sunshine gone for now, at least we still have cake! Huzzah!
With British strawberries still in season, what better way to use them up then in a cake filled with a white chocolate buttercream and gooey strawberry jam filling, topped with white chocolate and fresh strawberries. Mmmmm – those elements tick all the right cake boxes for me – how about you?

Strawberry and White Chocolate Cake

Ingredients
- 200g unsalted butter
- 200g caster sugar
- 200g self raising flour
- 4 eggs
- 1 tsp vanilla essence
- strawberry jam
- 1 tbsp of white chocolate spread
- 1 tbsp full fat cream cheese
- 150g white chocolate
- fresh strawberries for decoration
Instructions
- pre heat the oven to 180oC / 160oC (fan)
- grease 2 x 8 inch cake tins
- cream the butter and sugar together for 3-4 minutes until it is pale and soft
- add the eggs, the vanilla essence and 1 tbsp of the flour and beat well for a few minutes
- fold in the flour
- divide the batter between the 2 cake tins and cook in the oven until risen, golden brown and cooked right through
- once cooked, leave to cool
to assemble the cake
- mix the white chocolate spread and the cream cheese together to make a smooth frosting
- then sandwich the two sponges together using some jam and some of the white chocolate frosting
- melt the white chocolate and then spread over the top of the cake
- then slice some strawberries and garnish the top of your cake
- keep in the fridge to chill before serving
- yummy!
