Over the last few weeks its been that time of year when the hedgerows have become abundant with blackberries. I love using them in pies and crumbles but it is also nice to bake with them a different way, especially in warmer weather as it was at the end of August.
A couple of weeks ago I made some blackberry cupcakes to take to a birthday tea party which made a nice change from the more common strawberry cupcakes you see in the summer. I actually added some blackberries to the batter to make purple cakes once they were cooked.

Ingredients
- *CAKES*
- 150g unsalted butter
- 150g self raising flour
- 150g caster sugar
- 3 eggs
- 50g blackberries
- *DECORATION*
- 300ml double cream
- enough blackberries to place 1 on each cupcake
- white chocolate curls
- 1-2 tbsp elderflower cordial (optional)
Instructions
- Pre heat the oven to 180oC / 160oC (fan)
- Line approx 18 cake trays with paper cases
- Cream together the butter and sugar for a few minutes until pale and creamy
- Add the eggs and a spoonful of the flour (to avoid curdling) and beat togther until light and airy
- Add the balckberries and beat well to break them down and turn the batter purple
- Fold in the flour until combined
- Divide the cake batter between your paper cases - it makes approx 18
- Place in the oven and bake for about 15-20 minutes until cooked all the way through
- Remove and allow to cool thoroughly
- Meanwhile whip the cream (and elderflower cordial if using) until thick being careful not to over beat and make it too rigid
- Place in a piping bag and then top each cooled cupcake with the cream
- Decorate with a blackberry and some white chocolate curls/gratings
Lovely and light and easy to eat!

Oh Jenny these look delicious and what a great idea, I never would have thought of doing this. We have tons of Blackberries and the girls are picking more every day, I’m feeling a bit crumbled out.
I am really going to try these over the weekend. My baking can be a bit dodgy, I’m no Mary Berry that’s for sure, but I’ll give them a go. I even have elderflower cordial that I made myself over the summer 🙂

Oh I did white chocolate and fruit cupcakes too! Mine were with pear though. I’m not a huge fan of blackberries, but I do think that they look very pretty topping the buttercream like that.
