Blackberry Cupcakes

Ingredients
  • *CAKES*
  • 150g unsalted butter
  • 150g self raising flour
  • 150g caster sugar
  • 3 eggs
  • 50g blackberries
  • *DECORATION*
  • 300ml double cream
  • enough blackberries to place 1 on each cupcake
  • white chocolate curls
  • 1-2 tbsp elderflower cordial (optional)
Instructions
  1. Pre heat the oven to 180oC / 160oC (fan)
  2. Line approx 18 cake trays with paper cases
  3. Cream together the butter and sugar for a few minutes until pale and creamy
  4. Add the eggs and a spoonful of the flour (to avoid curdling) and beat togther until light and airy
  5. Add the balckberries and beat well to break them down and turn the batter purple
  6. Fold in the flour until combined
  7. Divide the cake batter between your paper cases - it makes approx 18
  8. Place in the oven and bake for about 15-20 minutes until cooked all the way through
  9. Remove and allow to cool thoroughly
  10. Meanwhile whip the cream (and elderflower cordial if using) until thick being careful not to over beat and make it too rigid
  11. Place in a piping bag and then top each cooled cupcake with the cream
  12. Decorate with a blackberry and some white chocolate curls/gratings
