I am always trying to think up new ways of using up over ripe bananas as I do hate to see them go to waste in the erm well waste! Previously I have made muffins, cakes, tea loaves and pancakes so today when I was thinking of what I could make I decided to have a go at making some cookies. As usual it was left to the shelves of my kitchen cupboards and fridge to see what would go into these cookies, and after weighing it all up I opted to make some Banana & Nutella Breakfast Cookies. I have called them this because very obviously I have combined banana and chocolate spread (yum!), but I have also added some weetabix to the cookies which gives them a wheaty taste. I also thought that by including them along with wholemeal flour and bananas, its makes for a cookie which is a little bit healthier. Well, thats my excuse for eating them at least!
Makes 20
200g wholemeal plain flour
2 wheat breakfast biscuits (weetabix)
150g caster sugar
2 bananas
2 tbsp Nutella
100g unsalted butter
1 egg
pinch of salt
1/2 tsp baking powder
Pre heat your oven to 200oC/ 180oC (fan)
Grease and line 2 large baking trays
Place all the ingredients except for the Nutella into a large bowl
Beat together until creamy
Fold in the Nutella but do so only a couple of the times, so that the chocolate spread is still visable and streaky
Place 1 tsp of the cookie dough onto the baking trays allowing space for them to expand inside the oven.
If you like your cookies crispier, flatten the dough slightly
If you prefer your cookies gooey, leave them unflattened
Cook for about 10 minutes – if you prefer your cookies less gooey and more crispy cook for a further 2 or 3 minutes
Remove from the oven – if any are stuck together use a fish slice to run down the part which joins the cookies together to separate them
Leave to cool on the trays before transferring to a tin to keep them fresh
They are lovely with a cup of tea!
Being made with banana and weatabix these cookies do have a different texture to a ‘normal’ cookie, but I thought they were really nice and a bit different and a great way to use up bananas.

cookies for breakfast, oh yes please! bananas aren’t lasting very long at all in this heat so I might have to make some of these, although we don’t have any weetabix as it’s only me that likes it.
