Ingredients
250g Aunt Bessies ready to roast parsnips
175g butter
3 eggs, beaten
250g self raising flour
200g light brown sugar
100ml honey
2 tsp baking powder
3 tsp mixed spice
50g chopped walnuts
zest and juice of 1 small orange
50g unsalted butter
100g icing sugar
1 tbsp honey
1/2 tsp orange zest
1/2 tsp vanilla extract
Method
Cook parsnips according to the instructions on the packet
Once they are cooked, place into a bowl and mash or use a blender to make it in to a rough puree
Then preheat the oven to 180oC / 160oC fan
Cream together the butter, honey and sugar until light and creamy
Add the sifted flour, mixed spice and baking power and beaten egg and mix well to combine
Add the orange juice and zest, walnuts and parsnip and mix again to distribute these ingredients through the batter
Grease and line two 20cm sponge tins and divide the batter between the two
Start to cream the butter until soft and then gradually add your sifted icing sugar until a smooth, creamy paste appears.
Stir in the remaining ingredients
Place in the fridge to keep firm until ready to use
Then take your cooled sponges
and sandwich together with your buttercream
It was really delicious and the parsnip and honey make for a lovely moist cake. And it rose so nicely while it cooked, so that my sponges looked so big and tasty!
I will definitely be making this again and the great thing about buying the frozen parsnips, is that I always have them to hand whenever the need to make such a cake arises again!
I am entering this into the Aunt Bessie #halftermfoodchallenge hosted by Britmums (which you can read more about here) where the task is to create a family meal using at least one of the ready made/prepared food items that the Aunt Bessie brand is famous for. Although, not a complete meal to me nothing is nicer than a slice of cake a cup of tea as an afternoon treat!

I must apologise Jenny, when I first saw the title of this I honestly thought you’d lost it. Parsnips…in a cake??!! BUT it looks really really yummy and I guess can’t be too much different than carrot cake?
I actually have a bag of these in the freezer, I’m not sure if I’m brave enough to make it xx

that looks gorgeous…definitely my kind of cake more than a chocolate cake…problem is I would end up eating it all as it’s got nuts in, the kids don’t like cake with nuts in but I love it! Genius idea…there’s no reason why cake can’t be a complete meal, especially with veggies in!x

i dont eat parsnips either BUT the only ones I have ever eaten are the AB ones as they are sweet and crispy. you REALLY wouldnt know this cake contains parsnip same as courgette cake doesnt taste like courgette.this tasted like a moist spicy fruit cake mmmmm
