Sometimes I get sent ingredients with which to create a recipe, and to start with I am a little flummoxed and have to think long and hard what I could make.
I was recently sent the following products from My Protein (an online store which sells products to aid fitness and nutrition for those who par take regularly in sports) with which to create a recipe:
After much deliberating, I decided to make some flapjack type cookies using the coconut oil in place of butter, and adding the peanut butter to add some protein and flavour. I had no idea if they would taste nice as I have never used coconut oil before, but it creamed nicely with the other ingredients I used, and remarkably the cookies – or oaties as I have called – them were tasty. Once cooked, as nice as they were I felt they were not very sweet as I had not added much sugar so I topped them with some melted chocolate instead, which really finished them off nicely. Here is how I made these Peanut Butter Oaties
- 75g coconut oil
- 2 tbsp peanut butter
- 100g demerara sugar
- 2 eggs
- 175g oats
- 50g cocoa powder
- 100g milk chocolate
- pre heat the oven to 190oC / 170C (fan)
- grease and line 1-2 baking trays with greaseproof paper
- place the coconut oil and sugar in a bowl and beat together for a few minutes until the coconut oil is blended with the sugar
- add the peanut butter and eggs and beat again for a few more minutes
- stir in the oats and cocoa powder
- place teaspoons of the mixture onto the the baking trays cook in the oven for approx 20-25 minutes
- leave to cool completely
- once the oaties are cold to the touch,melt the chocolate and top each one with some and leave to cool again
- keep these in an airtight tin for up to 5 days
These were very nice and the coconut flavour was very subtle as it was the peanut butter which came through the most. I think they could also work with some raisins in too, and it is something I would add next time. A few children enjoyed eating them at playgroup which was good, as I was not sure if they would be sweet enough for little ones!
