As I have mentioned many times on my blog, I live with 3 fussy eaters and the only fish they really enjoy eating is the type that is white, shaped like rectangles and come covered in breadcrumbs. They will also eat homemade fish cakes where I use tinned salmon or pilchards, but trying to get my family to eat fresh fish is not an easy task. That said,I did get the boys to try some salmon the other week and they actually said they quite liked it, so I must make it for them again soon to encourage a fledgling new taste.
I LOVE salmon and I often buy it just for myself because not only is it healthy but it is so good for you. I am not really that adventerous with my salmon eating, preferring to just bake it in the oven in some foil, with some butter, pepper and lemon or maybe some sweet chili sauce. Sometimes I use up left overs in a quiche or of course fishcakes, but I would like to try some new recipes. There are so many tasty ways to cook it, and I have found a few suggestions that sound delicious.

Tandori Rub
I Make little foil parcels with a salmon fillet, a knob of butter, a bruised garlic clove, parsley, black pepper and the juice of half a lemon. Bake for 20 minutes and discard the garlic before serving. Delicious and so quick and easy

I like salmon nicoise, with cream cheese and rocket in a bagel, with scrambled eggs on English muffins, coated in crushed cornflakes as nuggets, en croute, pan fried with noodles…I love it!! Oh and in a fish pie too.
Baked with spinach, orange juice and yogurt. Sounds shocking but tastes fabulous.

Like you, foil parcels baked with lemon. But also, make a white sauce, add the raw salmon and it will cook through. Meanwhile boil pasta and broccoli. Drain and mix together. Simples.
I love oven roasted salmon, served with roasted beetroot from my garden, and a pan fried mix of homegrown courgettes and pancetta. Scrummy!
